Feed my Family: Spice it up!


Ok, noticing a theme?
Yes, it is Friday...
Yes, I'm linking with Becky's Feed My Family Friday.
It's another pasta recipe.

Well, we don't have pasta once a week -
but when we do it is with
(say it with me)
Brown Rice Pasta.




I do like to experiment with recipes, and
it is so fun to disguise the same ol'
chicken & pasta with different accessories.

Today is a spicy-kind of day.
Add a bit more oil & vinegar to thin
and this sauce can be a salad dressing.  mmmmmmmm!






Spicy Thai Noodles sound so cultured,
so fancy and I apologize deeply if you have a peanut allergy.
I can't imagine...not only because I love PB,
but because it is so serious!

Kids picky eaters?
They will like this.  If they like PB&J, 
or dipping their carrots/celery in PB.
Try it!




Spicy Thai Noodles
(first posted here)

1lb brown rice spaghetti (can use any pasta)
1lb chicken, diced
1C diced peppers, any color
sesame seeds & peanuts (garnish)

~ Sauce ~
1/2C peanut butter
6T lemon or lime juice
1/2C soy sauce (low sodium tastes better)
2t red pepper flakes
6T sesame oil
15 drops chili oil (found in asian aisle at market)
6T rice or white vinegar

1. Make pasta according to package instructions
2. Mix all ingredients for sauce.
3. When noodles are still hot, pour sauce over top
and mix until well incorporated.
4. Add chicken, peppers and top with seeds & nuts.

Enjoy!
