An easy anytime breakfast ~


This breakfast is super simple...
and would even be delish
for dinner...OK, lunch too ;)


Ingredients:

scrambled eggs
pepper jack cheese 
(any kind of cheese would work!)
avocado slices
refried black beans  (recipe to follow)
hash brown patty
your favorite salsa
(I used TJ's double roasted salsa)


To make retired black beans:


1T reserved bacon drippings
1 can organic canned black beans, liquid too
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon pepper

Directions:
1. Heat drippings in a shallow fry pan until melted,
add canned beans and liquid.
2. Add seasonings, stirring until incorporated.
3. Bring to a boil and smash with the back of a wooden spoon
or potato masher, mashing 1/2 of the beans
4. Cook until desired consistency, serve.

{Goes so well with spanish rice:
1 packet frozen rice packet, heated according to packaging
1/4 can of tomatoes with chills or jalapeños
1T butter
1 teaspoon salt}
