For almost exactly a month,
my husband has been through an
appendectomy and through that,
it was discovered that he had leukemia.
(Chronic Myeloid Leukemia - CML)
Since then, we have been shuffling our
daughter from one very willing
house to another while we have been
attending one doctor appointment
after the next.
It has been a week since J's last
visit with the oncologist.
(did I mention how much I love her? What an angel she is to us!)
It was there that we realized the medicine
she prescribed is working.
WELL.
Like cut your count by 1/2 well.
That news is so beyond our expectation
the only expectation is that the
Lord has heard your prayers. Our prayers!
He is present in this process,
in the dark days as well as these days of success.
Thank you for your continued
love, support, prayer & encouragement.
Thank you for
texting, calling, sending cards, emailing,
and posting on my blog.
We are encouraged, hopeful
as well as eternally grateful for this time
together as a family, and sharing
this with you all.
We are so blessed.
SO - cheers to a great weekend,
a happy Friday - and a recipe.
This came from my sweet friend from high school, Anne.
As I originally posted the story about her...
her sister is the ever so fabulous Lulu & Co!
Lulu's blog is one of the first blogs I read...ever....
...and completely inspired me to start blogging.
And I only found out they were related
after reading for months & months...!
1 box Gortons Fish Tenders in **Original Batter (any fish stick will do)
16 small corn tortillas, warmed
1 1/2 c. finely shredded cabbage
(I liked the crunch of the cabbage and its super healthy)
2 limes quartered
Pico de Gallo salsa of choice
Tartar Sauce (recipe follows or use store brand)
Cook fish according to directions.
Warm tortillas,
To serve: Place fish stick into tortilla, add tartar sauce, cabbage, salsa, and assmeble to your liking. YUM!!!!!!! You can totally add other veggies. We added shredded carrots once too.
**Can substitute any grilled fish, you like to save on calories!**
Tartar Sauce
1 c mayo
1/4 c. minced cilantro
3 Tbsp minced jalepeno
2 Tbsp dill pickle relish
1 Tbsp fresh lime juice
1 tsp yellow mustard
1/4 tsp salt
Mix in a bowl and refrigerate up to 5 days.
Enjoy! Happy Friday.
