the fatty-comfort classic
Tetrazzini
to a relatively gluten-free,
much lower fat version.
I'm not a sufferer of gluten allergies
but I do know it is best to limit when possible.
Brown Rice Pasta is my
favorite substitute.
So, without further adieu -
Tracy Tetrazzini:

8oz brown rice spaghetti noodles
4Tablespoons butter
4Tablespoons flour
3/4teaspoon salt
1/4teaspoon pepper
1/2teaspoon garlic powder
1teaspoon onion powder
1cup beef stock
1cup fat-free half-and-half
2Tablespoons dry white wine
2cups cooked chicken breast, chopped
1/4cup canned roasted red peppers, diced
1/4cup grated parmesan cheese
1/2cup grated Quatro Formaggio (Trader Joe's)
{Italian 4-cheese blend}
Directions
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes, or until al dente; drain.
- Meanwhile, in a large saucepan, melt butter over low heat. Stir in flour, salt, pepper, onion and garlic powders. Cook, stirring, until smooth. Remove from heat, and gradually stir in beef stock and fat-free half-and-half.
- Return to heat, and bring to a low boil for 1 minute, stirring constantly. Add wine, then stir in cooked spaghetti, chicken and peppers. Pour mixture into the prepared baking dish, and top with cheeses.
- Bake 30 minutes in the preheated oven, until bubbly and lightly browned.
I took a lot of help from my lifeline: Trader Joe's.
Things like the cooked chicken, the jar of roasted peppers
(they have red & yellow!), brown rice spaghetti and the cheeses.
I do know that many of the same things can be found
in any grocery store.

you make me giggle. "relatively gluten free" haha! :) Do you realize that next week at this time exactly we will be sitting together! yippee!!!
